Dizzy Dancer

It is no secret that Sophia loves music and dancing. My parents have a record/cd player that is right at her level and this last time at home she learned how to push the play/pause button---which she loved doing. She was loving the Christmas music and kept spinning and dancing....she is a funny one..(btw..just ignore our un-ending laughter and comments..ha)





When she woke up from her nap on Sunday we also got her on video seeing the tree for the first time:



My poor little hard drive is currently in the shop...one guy said that everything is still there it just needs to be recovered. I found a little computer repair place that says they are pretty sure they can get the data off. The most they charge is $300..ugg..but I'm willing to pay it for all the photos/videos. The other place I called gave me the price of their "Economy Package" which was around $599-$1800. SERIOUSLY!?  I said..no way....as much as I want these photos and videos..it isn't worth it. Sigh...here is to hoping they can recover at least something...

Christmas Tree!

This afternoon was fun and holiday filled in our house....but the night took a darker turn--well, for me. I have a 1 tb external hard drive that I keep all my photos, videos, mp3s, etc on. I brought it to the living room to get some photos off and was sitting on the couch...in the middle of putting Sophia up on the couch the hard drive slipped off..and fell on the floor..uggggg.  It is running SUPER slow and won't do much of anything. Do you know how much this makes me want to puke?  It seems that all the files are still there..I just need to get them off and it takes forever. Most of the photos are on my blog or shutterfly or other various places...but not all of them... and that makes me sick. I'm going to take it into a computer place tomorrow and hope, with all my heart, that the pictures can be restored. Lesson learned...save photos online, as well as on the hard drive. OK...moving on to the better part of the day. We got our tree up while Sophia napped and she was loving it when she woke up...

thanksgiving 2011

My parents got a new computer and guess what? I set the router up and we have wireless at their house again! That means time for Thanksgiving pictures! First off...last night we decided to hit up Wal-Mart at 10 pm for some of the Black Friday deals. We headed on over to Rantoul thinking it might not be as busy...it was bad...bad as in ...where the heck do all the people come from? And they were all so weird..and going crazy buying who the heck knows what! We got our few items and headed home. We went out later in the day today and still got some Black Friday deals--why get up early? Anyways....I need to go to bed but here are some Thanksgiving pics before I do..enjoy:

whoops

1 week has gone by again and my blog has been SILENT! So sorry to all my 3 readers!  And so what did you miss while I was silent? Ohh..nothing really. Yesterday Sophia decided to run...she was running-in a kid way- back and forth in the living room saying WHOOOAHHH. It was cute. We leave for Fisher on Wednesday morning for all the fun Thanksgiving festivities! Can't wait!! I'll try to find something interesting to write on here this week....but no promises:)

14 months

Despite bad looking hair (we try to put cute clips in her hair, but she is on to us. She pulls them out right away), wearing giant slippers, mac & cheese all over her white sleeves, and only sitting still for about 5 seconds I was able to capture Sophia at 14 months on 11-11-11.

Little Mommy

I have been thinking of Sophia has a little mommy lately. She is really into "feeding" her baby dolls with their bottles and pushing them around in the stroller. She also likes to hold them and pat their back. Do you even know how adorable I think this is? AHHHH... I can't handle the cuteness! Here are some videos of her in action. BTW...her bangs? Yah, they were long in the video from a few days ago..not so much anymore. I decided to trim them a bit because they were hanging in her eyes. I trimmed them too short...whoops.. I guess they'll grow out and on the positive side they aren't in her eyes anymore..but I still feel bad that they are so short.

I am not one to love cooking....but I do it...usually out of necessity so we can all eat in my house. Yesterday was an off day for me and cooking. I made a new dinner recipe AND baked--AHHH!  I saw 3 ingredient pumpkin bread on none other then my favorite site....Pinterest. It ended up taking like 2 hours to cook but YUMMY it is good!. This morning I popped it in the microwave for a few seconds, spread some butter on it and mmm...I was in love.  So..here's what I did:

1 can of pumpkin puree
1 box of spice cake mix
1 egg   ( I saw another recipe that added 1 egg so I added one)
1/2 tsp pumpkin spice (some recipes add pumpkin spice-I didn't have any so I didn't add any)

Mix up and pour in a loaf pan, put it in the oven at 350° and bake. Again, for my oven it took like 2 hours...I just kept putting in the toothpick until it came out clean..but most recipes said 45 mins-1 hour

And you will never believe this but I also made dinner from a Pinterest link. Yes, yes, I know..I'm obsessed with Pinterest...but how can I not be? Hello-it has everything on it!  I made fish tacos for dinner and they were some of the best I've made yet! The best part? They were crazy easy and fast.

Here is the recipe (copied from Smashed Peas and Carrots):

Blackened Fish Tacos

4 filets of fish (cod or tilapia work the best, you want a nice mild fish!)
blackening seasoning 

To make blackening seasoning:

1 tbsp paprika
1 tsp white sugar
4 tsp dried thyme
2 tsp onion powder
2 tsp garlic powder
2 tsp salt
1 1/2 tsp black pepper
3/4 tsp cumin
1/2 tsp ground nutmeg
1/2 tsp cayenne pepper (more if you like spicy, less if you don't!)

Mix everything above together and apply liberally to your fish filets. If you make this blackening seasoning recipe you will have plenty leftover for something else...just so you know! Place on a baking pan and bake in the oven at 425 degrees for 15-20 minutes or until fish is flaky and tender.

To make slaw:

1 package shredded cole slaw (or you can shred your own cabbage and carrots!)
1/2 cup plain yogurt
1/2 cup mayonnaise
1 tbsp lime juice
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp dried dill weed
1/2 tsp cayenne pepper (add less if you are not a spicy person or add more if you like the heat!)

Place the shredded cole slaw in a large bowl. Mix the yogurt , mayonnaise, lime juice and all the spices together; add to the cole slaw and mix well. If you can make this ahead and refrigerate for at least 1 hour then all the flavors can blend and it's even tastier!!


And here was my recipe take:

#1-I didn't make the blackening seasoning...just used the cajun seasoning I had--which is almost exactly the same as blackening seasoning. 

#2-I used tilapia...mmm..I love tilapia

#3-I didn't add the dill weed or cayenne pepper to the slaw...but it was so yummy without them I don't think they really mattered. I DID add some cilantro though-which ramped up the taste a bit.

#4- I added some pieces of avocado to the taco...oh how I love avocados.

Oh man I loved these tacos....and am planning to make them quite often in our house.

Play time with Sophia

Sophia always wants music on when we are in the living room playing...and I willingly oblige because I love to listen to music too! Yesterday we listened to the new Florence + The Machine album. Last week it was the Coldplay album. Sophia danced and swayed---but never on video. Anyways...here is a video of her just enjoying her night and another one of her being chased around by Ben...she LOVES it! She would run to me and I would "save" her each time. It brought back flashbacks of childhood....running to safety from my Dad trying to tickle me:)
