I am not one to love cooking....but I do it...usually out of necessity so we can all eat in my house. Yesterday was an off day for me and cooking. I made a new dinner recipe AND baked--AHHH! I saw 3 ingredient pumpkin bread on none other then my favorite site....Pinterest. It ended up taking like 2 hours to cook but YUMMY it is good!. This morning I popped it in the microwave for a few seconds, spread some butter on it and mmm...I was in love. So..here's what I did:
1 can of pumpkin puree
1 box of spice cake mix
1 egg ( I saw another recipe that added 1 egg so I added one)
1/2 tsp pumpkin spice (some recipes add pumpkin spice-I didn't have any so I didn't add any)
Mix up and pour in a loaf pan, put it in the oven at 350° and bake. Again, for my oven it took like 2 hours...I just kept putting in the toothpick until it came out clean..but most recipes said 45 mins-1 hour

Pinterest link. Yes, yes, I know..I'm obsessed with Pinterest...but how can I not be? Hello-it has everything on it! I made fish tacos for dinner and they were some of the best I've made yet! The best part? They were crazy easy and fast.
Here is the recipe (
copied from Smashed Peas and Carrots):
Blackened Fish Tacos
4 filets of fish (cod or tilapia work the best, you want a nice mild fish!)
blackening seasoning
To make blackening seasoning:
1 tbsp paprika
1 tsp white sugar
4 tsp dried thyme
2 tsp onion powder
2 tsp garlic powder
2 tsp salt
1 1/2 tsp black pepper
3/4 tsp cumin
1/2 tsp ground nutmeg
1/2 tsp cayenne pepper (more if you like spicy, less if you don't!)
Mix
everything above together and apply liberally to your fish filets. If
you make this blackening seasoning recipe you will have plenty leftover
for something else...just so you know! Place on a baking pan and bake in the oven at 425 degrees for 15-20 minutes or until fish is flaky and tender.
To make slaw:
1 package shredded cole slaw (or you can shred your own cabbage and carrots!)
1/2 cup plain yogurt
1/2 cup mayonnaise
1 tbsp lime juice
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp dried dill weed
1/2 tsp cayenne pepper (add less if you are not a spicy person or add more if you like the heat!)
Place
the shredded cole slaw in a large bowl. Mix the yogurt , mayonnaise,
lime juice and all the spices together; add to the cole slaw and mix
well. If you can make this ahead and refrigerate for at least 1 hour
then all the flavors can blend and it's even tastier!!
And here was my recipe take:
#1-I didn't make the blackening seasoning...just used the cajun seasoning I had--which is almost exactly the same as blackening seasoning.
#2-I used tilapia...mmm..I love tilapia
#3-I didn't add the dill weed or cayenne pepper to the slaw...but it was so yummy without them I don't think they really mattered. I DID add some cilantro though-which ramped up the taste a bit.
#4- I added some pieces of avocado to the taco...oh how I love avocados.
Oh man I loved these tacos....and am planning to make them quite often in our house.
